mojito watermelon

My brother-in-law made this for a party they went to, and thank goodness they had some leftovers!!  This is seriously sooooooo good!  Tastes so refreshing!  I asked Nick what it was called, and I should have known….I LOVE mojitos!  😉 Where has this been all my life?!

If you want to snack on something or are going to a party and want to bring something that will impress the guests, this is a recipe to try.  Nick got it from the Country Living website.

Ingredients:

  • 2 tbsp. olive oil
  • 2 strips lime zest, sliced, plus 2 tbsp juice
  • 1 tsp. sugar
  • Kosher salt
  • ground black pepper
  • 1/2 small watermelon, discard the outside and slice
  • 1/3 c. torn mint
  • Flaky sea salt

In a bowl, whisk together the oil, lime juice, and sugar to make dressing.  Add salt and pepper.  Top watermelon with dressing, lime zest, mint, and sea salt.
