It was my husband’s 34th birthday on August 31st! 34 sure looks sexy on him (OW OW!!), and I gotta say, he makes life pretty freaking awesome! He is the most affectionate, hard working, funniest, hands on parent, will bend over backwards for you type of person. I’m pretty darn lucky to get to do life with him! Ok, ok… enough of the mushy stuff.
I don’t have my crap together most days but when it comes to birthdays, you better believe I make sure the kids or the hubby will have the BEST birthday ever and be spoiled rotten! I’m that person who still looks forward to my birthday even if I’m 34 years old. It’s the one day that it’s all about ME. I want Blaine and the kids to feel extra special on their birthday too… from the moment they wake up to the moment they go to bed. I go all out and usually am exhausted by the end of the day, but it’s so worth it. They usually look at me and say “that was the best day.”
This is what Blaine woke up to. I mean I think I just won “best wife award.” Yes, I make a handwritten card. Not only did the card have our kids’ names in there… the other kids signed it too! Niña’s kids felt pretty special being a part of Uncle Blaine’s birthday!
Whenever we go out for breakfast, Blaine orders an eggs benedict. His birthday breakfast included that and his fave pastry (blueberry strudel) from Jaarsma Bakery. I think everyone was surprised I was in the kitchen that early.
Niña has so many Rae Dunn mugs. She has this crazy addiction! I’m glad she had one that fit perfectly for the special day!
The kids couldn’t wait to get their hands on the goodies!!
I googled “eggs benedict recipe” online and many came up. I decided on this healthy eggs benedict recipe online from the Weight Watchers website. When it says it’s super easy as the difficulty level and says healthier, it’s really a no brainer! 😉
Ingredients
- 1 Tbsp white wine vinegar
- 4 large eggs, at room temperature
- 4 slices uncooked Canadian bacon
- 1/4 cup light mayonnaise
- 1/4 cup fat-free plain Greek yogurt
- 1 tsp Dijon Mustard
- 1/2 tsp lemon zest
- 1 tsp fresh lemon juice
- 2 tsp unsalted butter, at room temperature
- 1/2 medium fresh tomato, cut into 4 thick slices
- 2 light English muffin split and toasted
*It asked for chives but I didn’t have any on hand.
Fill a pot or skillet halfway. Bring to a boil. Add Vinegar. Reduce heat to barely simmering.
The recipe said to break each egg into a separate small cup. I just put it in 1 mason jar. Gosh, I’m a dare devil. Slide the egg one by one into pot or skillet. Cook until whites set (mine set in about 4.5 minutes). Transfer eggs to paper towel with a slotted spoon.
Wipe out pot or skillet. Cook Canadian bacon on medium high about 1 minute per side.
For the sauce, combine mayo, yogurt, lemon zest, and lemon juice in microwave safe dish. Microwave about 30 seconds. Add butter and stir until melted.
Toast english muffin. Now time to start plating! First is the english muffin. Second is the tomato. Third is the Canadian bacon. Fourth is the egg. Fifth is the sauce. I then topped it with some ground pepper.
Here he is digging in! Blaine said it was the bomb and wanted seconds!! Woohoo!! It really was quite tasty! Now he says I should make it every morning…ha! I was quite impressed with myself especially the first time poaching an egg! First time making eggs benedict was a SUCCESS!!
For lunch, I met him at Centro while my mom watched the kids. Niña tagged along as our third wheel.
Blaine’s favorite dessert is chocolate pie so guess who made some chocolate pie? Me of course! I even crushed up a Hershey chocolate bar for the topping. I also bought some pizza because his favorite food is PIZZA. It’s nice because I didn’t have to make dinner! 7 Stone is one of our favorite pizzerias so that’s what I ordered.
Since we are staying at Niña’s until we build a house, we had so many people that it was like a party! My mom was even here to celebrate!
I don’t know if it’s crazy or determined, but Niña and I both didn’t have a piece of pie. The struggle is real! I have a sweet tooth so this was soooo hard to pass up!
I sure loved seeing a HUGE smile on Blaine’s face all day and sure enough he told me it was the best day. Mission accomplished!
