Today, I wanted to share my family’s favorite mini muffin recipe! Banana + peanut butter + chocolate chips = the perfect combination! Even better that it’s flourless. We’ve been making these for years, and it’s so easy to make. You can find this type of recipe anywhere, but the recipe we like to use is from Avery Cooks.
There are only 8 ingredients, and I’m sure most of these you already have in your pantry! First step is to preheat our Hestan oven to 400º. Check out the backlit control knobs! You know the oven is in use when you see that light.
Combine the peanut butter, egg, salt, vanilla, baking soda, and banana and blend them together. We like using our Ninja blender cups.
Once it’s blended, we pour the mixture in a bowl so it’s easier to scoop out. Then you stir in the chocolate chips.
Scoop the mixture onto the mini muffin pan.
Let it bake for 8-10 minutes. Bashy pushes that button on the far right of the knobs, and the soft-on & off interior light comes on. He can watch what’s being baked through the extra-wide glass oven window. It’s a great viewing area while keeping temperatures outside cool to touch.

The recipe makes this many mini muffins…and we usually double or triple the recipe. 😉
