For Cinco de Mayo, I ended up making fried ice cream which I found on Pinterest from The imperfect Housewife. Easy and successful recipe once again! Ok, It’s not really fried, but it sure tasted similar (actually better) to ones you get at restaurants. I’ve been raving about this fried ice cream dessert to friends and family. Seriously, it’s THE BEST fried ice cream dessert, and I’ve tried plenty in various restaurants. I’m trying to cut back on sweets, but I just couldn’t help eating a scoop of it every night. I’ll tell you now, I was seriously counting down the moment until it was time to gobble that scoop up…which was when the kids went to bed so I could enjoy it in peace and quiet. 🙂
Ingredients:
4 cups crushed Corn Flakes (that means 4 cups AFTER being crushed)
1 stick butter
1 tsp cinnamon
1 container whipped topping (8oz)
1 carton of vanilla ice cream
1 cup sugar
-Take ice cream out of freezer to soften (at least 30-60 min beforehand).
-Crush Corn Flakes.
-Melt butter in pan on medium. (check out my lil helper)
-Once butter is melted, add the crushed Corn Flakes and sugar. Stir for about 3-5 minutes.
-Put 1/2 of the mixture in a dish covering the bottom.
-In a bowl, mix ice cream, cinnamon, and whipped topping (I used a hand mixer).
-Put ice cream mixture on top of the Corn Flakes mixture in the dish.
-Sprinkle the rest of the Corn Flakes above the ice cream. Put in freezer until ready to serve…ENJOY!
For drinks, the hubby and I had Jose Cuervo – coconut pineapple margaritas. The kids had punch which consisted of rainbow sherbet and Sprite. They loved drinking from a “fancy” glass too.
