Our older sister (Nariza) and niece come over at least once a week for a playdate. She typically cooks for us and all the kids too. 🙂 What she made for lunch was perfect for my “happy with my body” journey. I watched her and this one I would be able to do and YOU can do too! If I’m confident I can do it, you know it’s an easy one!
Ingredients:
6 chicken breasts (these had skin and bone but you can use boneless chicken breasts)
1 lemon
rosemary
red potatoes
1 garlic (crushed and chopped)
ground pepper
rosemary

Preheat oven to 450 degrees.
Put chicken breast in dish.
Sprinkle ground pepper.
Slice lemon and place on top of chicken.
Cut red potatoes and spread all over dish.
Spread rosemary and garlic.
Roast until chicken is cooked through, about 25 minutes.
As a side, she cut one head of cauliflower and onion. She spread it on a tray and sprinkled it with olive oil. Once the chicken was cooked, she removed the chicken dish and placed the cauliflower tray in the oven and roasted for about 20 minutes or until golden.
So easy and so good!! Enjoy!
