Well, we haven’t done a recipe post in a long time. It’s time for another one. This time the DELICIOUS tator tot casserole! Not only is it good but it’s darn easy to make. I’m all about easy meals. For the longest time, I didn’t do much of the cooking. I’m not really into the complicated… “I’ve never heard of those ingredients” meals. Now, I’ve been doing most of the cooking, and my husband, Blaine, now calls me Top Chef. haha…He actually does sometimes! 😉
I also like the fact that it makes plenty of servings for our family. I have a family of growing boys, and they sure EAT A LOT. It always stinks when you’re still hungry and would like another helping but there’s no food left. I guess that’s when you know the food you make is good!
I got this recipe from my mother-in-law, which she thinks she may have gotten from a magazine. I wish I could credit who ever made up this recipe!!
Ingredients:
4 cups 30 oz. bag of frozen potato tots
1 lb. ground beef
1 pkg. 10 oz chopped broccoli (thawed)
1 medium tomato
1 can 10.75 oz of cream of celery soup
1/2 cup milk
1 cup cheddar cheese shredded
1/4 tsp. garlic powder
1/8 tsp. black pepper
-Preheat oven to 400 degrees
-Place potatoes on 10×13 pan
-Bake uncovered for 10 min. at 400 degrees
-Brown beef and drain
-chop tomato
-Place beef, broccoli, and tomatoes on top of potatoes
-Combine soup, milk, 1/2 cup cheddar cheese, and seasonings. Then pour over beef mixture.
-Bake covered for 20 min. at 400 degrees
-Top with remaining cheese and bake uncovered for 2-3 min.
