Doing what’s best for me…

Niña and I plus both of our husbands are going to be taking a trip to Mexico the end of August.  What does that mean?  A great motivation to lose those extra weight we’ve been wanting to get rid of!   I may never have the same body before I had kids, but gosh darn it I want to be as confident with my body as I was back then!  That shouldn’t be too much to ask…right?!  The thing is, I want to do this my own way.  Not a workout plan that I have to be at a gym a certain time/day or a meal plan that I have to count calories or carb intake.  I just want to go my own pace and do what I think is best for me.

TWO things I know that I need to do: work out and eat better.

The problem is I.don’t.work.out, or I should say I have the mentality that working out isn’t for me.  I’m literally that mom that wears yoga pants so I’m out of my pajamas…not to do yoga.  I feel like I don’t have time for it (I know..excuses, excuses).  If I have free time, I want to sit on my butt and watch reality shows or go to Target and roam around the aisles for hours!  I do go on walks with my family, and I always say watching my kids is typically my workout for the day…..walking around in the house constantly (they tend to let me know they want more milk the moment I sit down), walking up and down the stairs usually holding a child sometimes holding 2, constantly bending to pick up a child, putting a baby in the air as she loves ‘flying’ like an airplane, chasing the kids pretending like I’m a monster, etc.

Well, SURPRIIIISE!  I went on a 2 mile walk/jog a few days ago.  Minus getting attacked by a bird while jogging (yea, you read that correctly), I felt great afterwards!  Not like I’m going to be running a marathon anytime soon, but I think I’m going to do that more often!

About 1.5 weeks ago, I decided to start eating better.  I don’t really want to call it a diet because I want to keep this up.  I LOVE eating so I still want to eat delicious food!  I’m not a nutritionist by all means, but I’m just trying to cut back on carbs and want to eat more fruits and vegetables.  Plus, it’s time to stop drinking McD’s frappes (my addiction) so much!  It’s tough at times, but surprisingly have been doing really well!

 It’s been great trying out a variety of foods & recipes!  I’m sure we’re not the only ones, but my husband and I run out of dinner ideas sometimes and feel like we eat the same thing every week!  Pinterest has been a lifesaver!

The situations I’ve come across like going to parties or out to eat at restaurants haven’t been tough at all.  Since I’m not a rabbit, I don’t like to eat salads all the time.  😉 I just try to avoid breads/pasta.  For instance at 1 of the restaurants I ate at, I wanted the chicken breast entree that came with green beans & mashed potatoes.  Instead of mashed potatoes, I asked to substitute it with another type of vegetable (corn).

Below are a few of the foods I’ve made.  All really delicious!  I like to have an Aquafina Flavorsplash Sparkling Water {Berry Loco} with my meals.  I’m really bad at drinking plain water so this was a great alternative.  Watch for more food inspiration & recipes that I’m trying here on the blog!  From a girl that didn’t work out and didn’t eat that great before…I hope I inspire you all to be a better you.  I am only 7 lbs from my new goal weight and am feeling better than ever!

**Just a note: I DO cheat if I want to…especially with having wine after an exhausting day with the kids, beer during a World Cup game, or having a piece of birthday cake if I’m at a birthday party.  I don’t very often but when I do, I have no regrets! 🙂  Life is too short!  Just don’t go overboard!

Dinner: bananas & blueberries, bell pepper stuffed with mushrooms, onions, hamburger, seasoning, then topped with mozzarella cheese

Breakfast: my version of ‘egg rolls’….scrambled eggs wrapped in ham, topped with mozzarella cheese

Breakfast: Perkins Fit Favorite – Spinach & Mushroom Scramble (I skipped on having any bread)

Dinner: bananas & strawberries, chicken brats (2 different flavors-chicken enchilada and chicken, bacon, & swiss), my husband had brat buns with his but I opted out.

Dinner: Low carb pizza with cream cheese based crust (Found on Pinterest / original recipe HERE)

Ingredients:

1/4 tsp oregano 1/4 cup parmesan cheese (from a container) 2 eggs 8 oz.  italian cheese blend 4 oz. cream cheese (softened) tomato sauce & mozzarella cheese for toppings (I put pepperoni this time but am going to try hamburger & vegetables next time.  If you have a family like mine that loves pizza, make a 2nd batch!)

Combine eggs & cream cheese until cream cheese is smooth.  Add oregano and parmesan cheese.  Add 8oz of italian cheese and stir until completely moistened.  Grease a 9×13 pan.  Spread mixture evenly on pan.

Bake at 375 degrees until browned (20-25 min).  Then put in refrigerator and let cool completely.

Once cooled, I took it out of the pan and put on a pizza pan (that is why it’s important to put the mixture in a well greased pan).  Add tomato sauce, mozzarella cheese, & toppings.  Then bake for another 10-15 minutes until cheese is melted at your desire.

BOOM!  It was seriously delicious.  My husband who is a pizza fanatic (literally) couldn’t stop raving about it!  I couldn’t believe the crust was made with mainly cheese.  It tastes like a regular crust!  Enjoy!
